An Overview of Fruit Allergens: Structural, Functional, Phylogenetical, and Clinical Aspects

Most of the allergenic proteins from fruits identified so far belong to different families pathogenesis-related (PR) proteins. These PR have been classified in structurally and functionally unrelated proteins, but majority all fruit allergens three groups, particular PR-5 thaumatin-like (TLP), PR-10 Bet v 1-like PR-14 non-specific lipid transfer (nsTLP). Some can also be found among PR-protein PR-2 β1,3-glucanase PR-3 chitinases I, II, IV–VII, PR-8 III. In addition, other important occur protein families, such as profilins newly emerging group gibberellin-regulated (GBRP). Finally, that seed storage higher plants, including 2S albumins, 7S globulins (vicilin), 11S (legumin), must retained possible potential resulting unintended consumption seeds. Here, we present an overview structural organization, functional properties, phylogenetical relationships these groups allergens, supporting occurrence cross-reactivity cross-allergenicity often described between corresponding vegetables pollens.
